Slow Cooker Chicken Marsala – The Magical Slow Coo…


Slow Cooker Marsala is a dish cooked in a mushroom wine sauce with decadent cream added right before serving. Wonderful over mashed potatoes.

Easy chicken recipes are a staple in our house, when we aren’t making this chicken marsala we love Crack Chicken or Mississippi Chicken.

Slow cooker chicken marsala is a delicious dish that can be prepared ahead of time and cooked in the morning. It’s perfect for those nights when you don’t have time to cook dinner. The ingredients are simple, but the flavor is anything but boring!

Cooking in a crockpot is not only easy, but it also provides you with the opportunity to make your favorite dishes while you’re at work. If there’s one dish that I crave more than anything else, it’s chicken marsala. Here are my tips for making this delicious meal in your slow cooker!

How to make chicken marsala in a slow cooker

  • Boneless skinless chicken breasts – about 3-4 boneless, skinless chicken breasts
  • Seasonings – sea salt, pepper, garlic and oregano
  • Vegetables – shallot, white onion, mushrooms
  • Bacon – diced and cooked until crisp
  • Marsala wine – Only need a 1/2 cup, serve the rest as the beverage for your meal.
  • Beef broth – I use beef broth for it makes a heartier sauce, though you can use chicken if you prefer.
  • Heavy whipping cream – make sure to buy heavy cream not regular whipping cream.
  • Chopped parsley – optional garnish

What is Marsala wine?

  • Marsala wine is produced near Marsala on the island of Sicily, Italy.
  • Marsala wine is fortified with brandy or a neutral grape spirit. Since the wine is fortified it contains a higher amount of alcohol.
  • You can find Marsala wine in the wine section of your local grocery store.

Can I substitute something for the Marsala wine?

Yes, you can substitute something for the marsala wine in your chicken marsala if you prefer.

  • Madeira wine
  • Red wine – use your favorite!
  • Dry Sherry
  • Or use additional broth if you don’t want to use wine.

Instructions:

  • Add the chicken breasts to the slow cooker.

  • Sprinkle over the salt, pepper, and oregano.

  • Add the garlic, shallot, onion and mushrooms over the chicken.

  • Sprinkle over the bacon.

  • Pour over the Marsala wine and beef broth.

  • Place the lid on the slow cooker. Cook on HIGH for 4 hours or LOW for 6-8.

  • When the cooking time is done. Add the heavy cream and mix it into the broth.

  • Turn the slow cooker to HIGH for 30 minutes more and leave the LID OFF. To help thicken the sauce a bit.

  • Serve and enjoy! I serve half of a chicken breast for a serving. Alternately you can shred the chicken before serving.

Does the alcohol cook out of the sauce?

  • Since the slow cooker doesn’t get to a high heat, some of the alcohol may remain.
  • Don’t serve this dish to children or adults who don’t drink alchocol.
